January 31st, 2014

Here it is. Last day of the month. I am down 14.8 pounds for this month! Not to shabby! I am going out tonight with the hubby and his folks for dinner and drinks. So I'm totally going to splurge after a month of not doing any splurging. But I'm still going to go on with the rest of the day as being good! Tonight the dinner is an oriental buffet! ;) gonna enjoy it! :)

Coffee so far and I know I see one of those bananas coming to work with me and being consumed before long! 

Snack time was a kiwi and a juicy pear!!

Lunch time I had an orange and a little bit of steak

I said that dinner was going to be totally it of the ball park. It was an oriental buffet. I loaded 1/2 my plate with the spinach salad they had with just a little pit of dressing. A small scoop of rice, beef with broccoli and then they had chicken with all sort so of veggies as well. And I did cave and eat a dinner roll they had with it. It was awesome! Along with dinner.... A bottle of wine... Yup a bottle... Nice red and yummy!!!

January 30th, 2014

Day 30 of my "30 day challenge" I have lost 14 pounds. Most of that was at the beginning of the month. I haven't lost anything in the last 12 days. People keep saying don't worry about it, I'll see a change, especially since I am working out now. I'm creating muscle and losing fat, but it's all compensating itself. I'm frustrated because I'm not seeing the change... Yet... We'll see what happens in the month to come. I have one more day of this month and then can go into another month. 

Morning ritual:
Coffee.... Going to get a lunch packed up here soon. And a banana!!! Someone also stuck a white chocolate kit Kat in my box at work.... So I split it with my daughter! :) 

Ok, I may not have lost any weight in the last 2 weeks, but.... I was able to squeeze into my skinny jeans for the first time in a year.... So, there is some progress!!!! :)

Snack time: an orange!! :) 

Lunch time:
Banana
1 scrambled egg with hamburger
Small salad
More water

Dinner:
1/2 a pear
Some roasted cauliflower
Kale chips 
Pork loin
Water water water :)

Ok, so I'm going to try this reverse psychology on my body and eat my big meal in the morning and a light something at dinner, instead of a big dinner. I have heard people talk and talk about it, full your body in the morning and go easy later in the day. So that is what I am going to do today. Need to do something different because this stand still on day 10 at the same weight is driving me crazy!!!!

Having my coffee this morning. Going to go and make some breakfast here shortly!! I have my workout tonight. Think I can get in all 3 reps? We shall see! I hit 2 and 2 1\2 the last time I worked out, so I might be able to hit all 3 of them! :)

Why am I at a stall?? I haven't lost a thing! I'm eating right I'm excercising and not a single pound has come off in over a week! So frustrating! I don't know what I'm doing wrong or what is going on! Uggggg!

Today started early with training for work. Had my coffee at home as usual then got the kids ready and gone where they needed to go then off to training I went. I was doing great at training when sitting in the middle of the table was a honey and oats nature valley bar. I resisted and resisted until my tummy grumbled and I caved in. I ate one! 

Once I got to work, I went to go eat my banana and took a bite and realized that even though it looked ripe enough it was still hard  and really really green! One bite was it! So, I took my Asian pear and started to eat that! I got about 3/4 of the way done with it, when I ended up dropping it on the floor! So I to the garbage it went. Almost done with the first half of my day and I can get lunch. Hopefully nothing will go wrong with that! ;)

Lunch time was a nice bowl of paleo tomato soup and a tossed green salad. :) now making some dinner for the family. Looks like it's gonna be taco night. :)

I wasn't overly hungry so I had 1/2 an avocado and a handful of raisins. I did open up a jar of pickles I was wanting to try and had about 3 dill pickle spears out of it. :) they were goooooooood!!

Why oh why do I ever drink alcohol? Because the next morning I totally regret it when I get on the scale! Ugg.. It may only be a pound, but a pound is a pound, off or on. So, this morning after my morning coffee and after getting breakfast for the house done, I'm going to hit the gym and work on my little workout, see what I can do with  it! And mayb tomorrow morning I to. So frustrated and upset at myself!

Breakfast was a banana and 2 hard boiled eggs :)

Well, here it is the weekend. Today is Saturday which means bountiful basket day. I have come to love my bountiful baskets. I love all the fresh produce for the low low cost. It also gives me a great workout. Unloading the truck, squats, carrying the heavy items, and everything else that goes with it.

I have also decided tomorrow I'm going to go into the gym and do my workout. Get it up to a full 2 rotations. Wednesday Ben is going to kick my ass by making me do 3 rotations of each of my exercises. Those exercises include:

One leg split squats/curls 
Scissor kicks

Bench dips
Mountain climbers

Bench side step ups
Ball shuffle

Sumo dead lift high pull
Burpees

Dumbbell extenders
Plyo jumps

Skiers
Med ball slams

Some of thesea re just insane! The person that invented burpees just needs to be shot! Those are the most insane exercise ever! But, if you like them they probably don't work, right? Anyway, I am doing all these with 5 pound weights!

Having my coffee this morning. It's still early so I'm not hungry yet. I have she dal title bit of weight. Just 1/2 pound to go to get rid of that full 16 pounds from this year! Then it will be the 19 pounds from last Christmas and our fun disneyland trip! :)

Lunch was a miniola orange and a hard boiled egg.. Late lunch so didn't want to eat much to spoil dinner... Off to make dinner now!!! :)

Dinner was a tossed salad with a little pork cut up and tossed  with it, Brussels sprouts with bacon and fresh fruit. Oranges, strawberries and kiwi. Yummy!! Since it's Saturday I also had 2 hard apple cigars! :) my treat for the weekend! :)

Ok, I'm really tired of this stand still... Still sitting at the same weight for abut 5 days now. I am going to the gym tonight though to do a workout with the trainer. Something needs to give this weekend! I hope it does!

Morning time which means coffee and a banana. Just a little something! :) it's Friday so it's going to be a good day! ;) 

Snack time was a green apple. Then for lunch I had a tossed salad. Wasn't to hungry.

Now I'm back home from working out and grocery shopping and I'm still not hungry but know I need to eat something. So I am having just a simple taco salad for dinner along with some more water.

Had my butt handed to me in my workout. I'm up to 1 and 1/2 reps of my normal work out. He wants to get me up to all 3 reps by next week...... Ouch!!!! It's gonna hurt! :)

Usually I start off my blog first thing in the morning with my coffee.. I didn't get around to that today and here it is after lunch that I am just getting to my blog! It's been a crazy whirlwind type of a day! Of course I woke up this morning and had to get in an argument with my daughter which never sets the mood right. But after she was ready for school and I was ready for work, my day turned around..... Until I got to work! :)

Breakfast was my usually coffee and a banana

Lunch was earlier then normal for me today because I had to be an emergency substitute for a teacher at school. So my lunch was 1/2 a pork chop and green salad with balsamic dressing. I've been loyal to drinking my water today because I'm in class with a bunch of energetic 1st graders. :)

Not to sure what is going to happen for dinner but I'm sure I will figure it out. I stepped on the scale this morning and there was no change in my weight, just maintaining the last couple days, which is ok. Just means my body is catching up. :)

Dinner was a hamburger patty with spicy mustard and kraut with a salad... I did have a glass of wine tonight after my day of first graders....

Good morning! 1st day of week 4. Wow! Time has flown! Now that it's been a full 3 weeks I can honestly say, it's not much of a challenge anymore because I know what I am doing. I know what to eat and what to say no to and I still have my will power! I will hit my goals by the time school is out! I want to be in a cute bathing suit this summer! :) 

Breakfast is blonde drip coffee from Starbucks this morning! :) have a banana in my purse but haven't felt the need to eati t yet, although I think I will. I must start working in 20 minutes! Need to have a little energy!! ;)

Dinner time was at the in laws tonight. It's a Wednesday night. So with everything she cooked up, I had myself a taco salad. However, even though I didn't finish all that was on my plate, I'm feeling a little over full... More full then I usually feel. Think it get have been to much and maybe a little to late in the evening. I don't know. I'm sure I will figure it out in the morning when I weigh myself.

More water and more water. Maybe that's it... Oh who knows...

This is the end of week 3 of this "challenge" I have given myself. And I gotta say, I'm really glad I got into this mind set and doing it! I'm down 15 pounds! 1 pound away from the 16 I gain since last Christmas when we went to disneyland. I have these little benchmark goals and I'm almost to the first one! 7 pounds till I reach the 2nd one, 20 till I reach the 3rd one and 32 to reach the 'final' one. Now, the final one may not be the final one. It depend so n how I feel when I get there. We shall see. But as of right now, that's wheat I am working towards. 

Breakfast of course this morning has only been my coffee. Waiting till I get the last kid off to school and then I can get something to eat! Even if it is only a piece of Fruit. Something to start me off! :)

Alright, had a banana for breakfast...
Lunch time had a few sweet peppers, 5 oz of steak, a little butternut squash soup and an orange. Drinking lots and lots of water! :)

Here we go into another week. I feel amazing! Ready to take on this day! Having my coffee this morning, going to make some breakfast here shortly, then it's off to donate blood and pick up my hubby's sons for the day. Think I might be doing some chicken tonight. That sounds good! And totally having some more of that mango salsa wrapped in the butter lettuce. That was fantastic! :)

I had 3 mango salsa wraps, 2 sweet peppers and a few macadamia nuts and raisins. Drinking my water now! :) need to drink tons of water, I have kick boxing tonight! :)

Lunch time was light but I had some of my butternut squash soup. :) kids have talked me into bacon wrapped chicken for dinner! :)

Dinner was awesome!! 2 bacon wrapped boneless chicken thighs, tossed salad, a little mango salsa and 5 strawberries. :) finished up my 3rd 24 oz water bottle. Going to head to kickboxing in about an hour! :)

Almost 3 weeks into this challenge and I think I'm doing good. I feel like I'm so close to reaching my goals. I want to reach them quick but I. Know I need to take time. I'm only 19 days into this and I'm already down 14 pounds. That's ok, but it's better to lose only 12-15 a month. However this starting month was shedding a little of the wheat and grains that I had been eating. Along with the alcohol I had been drinking over the holidays.  

Made soup butternut squash soup yesterday for the week. Need to make up a huge salad to eat for the first couple of days of this week. (I make at least 3 salads through the week to go for lunches and with dinners)

Of course this morning I have my coffee in hand, waking up!  Had a small bowl of scrambled eggs with onions and hamburger.

Hubby and I got out of town for a few hours today and went to the sportsman show in tri cities. Of course with that, I always have to stop at the mercantile stand. Picked up some awesome pears for the house, a huge orange because I was hungry and a jar of pickled garlic! Can't wait to use it in cooking. Couldn't resist the free sample of peanut butter cup they had and a dark chocolate covered pretzel stick. My minor treat but that's ok! Back on the road heading home! Need to figure out dinner!

Had to have myself a gluten free hard apple cidar for the Seahawk game! Dinner is in the pressure cooker. We are having boneless beef ribs with a cherry/bourbon sauce, a mango salsa and Ellie is making a gorgeous tossed salad. She has become so good working in the kitchen and slicing fruits and veggies!

Butternut squash soup

There are so many veggies that are good for you. What better way to get them all into your diet then with a soup. That is what I did. I made a butternut squash soup with all sorts of veggies in it. I used a 6 quart crockpot so I have plenty for this week for lunches.

6 carrots
1 large parsnip
1 sweet onion
6 celery stalks
1 HUGE butternut squash
1/2 cup honey
2 boxes chicken stock.

Once everything is cooked down so it's tender, use a hand blender to purée it all up. A little bit of crumbled bacon and a drizzle of honey or some salt on top of it and it's fabulous! Hope you enjoy!!

Paleo tomato soup

I was feeding the kids some tomato soup and grilled cheese and decided I wanted to have some tomato soup as well. So I adapted a couple of recipes I had seen and created a mixture of both which turned out so awesome! Definitely need to make more of it! I made a full 6 quart crockpot full of it to last the hubby and I for lunches through the week! So this makes a ton!

3 - 13 oz cans of coconut milk
1 - 32 oz carton of chicken stock
2 - 29 oz cans of tomato sauce
2T of red curry paste

Simmered all day in the crockpot. Ate a small bowl and put the rest into containers and I bot the fridge, I was able to heat it up in the microwave and eat. Yummy... Use more or less of the red curry paste for a little more or a little less zing!

Here we go! Woke up this morning feeling awesome! Not sore from my kickboxing last night and feeling good! Have Bountiful baskets to do this afternoon which will be great! It won't be like last week where the wind was blowing crazy!!! 

Having my morning coffee then ging to make a couple eggs for breakfast! Down 14 pounds! 8 more to go to that first goal! I'm thinking I'm going to try and get into a pair of my skinny jeans next week if I'm down a couple more pounds! I'm pretty sure I have gotten the 'wheat belly' out of me! Just 21 to go to my 2nd goal which mean just 33 to go to my final goal now! It seems so doable but I know it's going to take a lot of work. And it's not just the weight I want to lose but to tone up this body and create some mass to it instead of flab and lose skin! I know I can do that! 

Of course starting my morning off with a couple cups of coffee.. 12 oz cup and on number 2!

Made myself a little omelette with shrimp, onions and tomatoes. Also had a banana and 1/2 an avocado to go with it. Didn't eat it all but ate what I could. It was awesome! :)

Lunch time wasn't overly hungry so I had a peppermint tea, an orange and some macadamia nuts and raisins. :) looking forward to some awesome dinner! :)

About 4-5 oz of roast, roasted broccoli (lots of it!!) and only ant 1/4 of a sweet potato!! Yum yum yum dinner! :) hubby and I finished off all the broccoli!

Well, not as frustrated today. That 2 pounds that I found over the last couple days is gone. There had to have been something grain based in my MIL Mexican feast she made. That's the only thing I can think of. Other then that I am doing good. 13 pounds gone and still on a roll. 

Have my cardio kick boxing tonight and totally looking forward to that! It's gonna be fun.

Had myself a very very large banana for breakfast.

Had myself pear and walnut salad, a little bit of apple chutney and a few raisins with macadamia nuts. Lots of water and about ready to make some tea! :)

Snacked throughout the day on some awesome sweet peppers that they were giving out as snacks at school! One bonus about working there is the awesome fresh fruit and veggie snack program they have for the kids. There is always a little extra! :)

Dinner was snacking! Macadamia nuts and raisins, 1/2 an avocado. 

Didn't eat much today but I wasn't overly hungry because I found a couple dark chocolate squares and had those as well.

Went to my kickboxing class. I was the only one there tonight and I had my ass whooped! The PT brought out the pads and had me hitting pads for a bit tonight. My legs turned to jello a few times and wobbled under me. But I kept going! It was a great workout!

So frustrated right now! This is why I try and not eat after 6pm. In the last 2 days I have gained back 2 pounds. No granted I know I haven't cheated. I have stayed on the right path but it's still frustrating! I need to remember certain rules for myself that I have learned over the last couple of years! 1 don't eat after 6pm. 2 when I'm this close to that time of the month, I will gain a little weight! We shall see what happens over this next week! 

I have also decided that this is going to be an on going challenge and not just a 30 day challenge. I'm going to keep it going until I have hit that desired weight I want!

Is it really the half way point of the month? That is crazy! One think I have learned about that is, now that I have cut out all the junk and it's been gone for a solid 2 weeks, I'm not craving it either! It's so much easier to pass it up now. I'm not even tempted to take it. When the kids offer me something sweet (like Ellie and her tic tacs) I can say no.

Coffee at my side as we speak. Can't start my morning without it!

Lunch was a bowl of tomato soup, tossed salad and a pear. Need to get some more water in today! Currently helping kiddos with homework!

Dinner wa pretty good. My MIL made a 'Mexican feast'. I made myself a small taco salad. Then she made a chili Colorado but didn't mix it all together. So I was able to just eat the meat and veggie part of it. Then she made a pork verde. Again, it wasn't mixed with the rice, so I was able to have the meat and veggies. It was a nice change of pace. :) I'm full but not stuffed. :) it's been a great night!

2 weeks into this now. As of this morning, I have lost 13 pounds. I am just 9 pounds away from my first goal which I hope to hit by the end on the month.

The start of another week. I'm on day 13 of this challenge and feeling great! Down 11.5 pounds and still on my mission! I'm feeling great, back to listening to my body, eating only when I'm hungry, not over eating when I sit down at meals. I always used to eat everything that was on my plate and I'm learning that isn't necessary anymore. I should only eat till I'm full, not over full. 

Having my coffee right now before the kids get up and start getting ready for school. And tonight I go in for my first full official workout with Ben! We shall see what he has ready for me to do! I'm sure it is going to be challenging, but I'm up for the challenge. I'm ready to get this body into shape and get  it to were I want it. I have so many cute clothes  in my closet I've bought throughout the last 2 years, and I want to wear them. I want to wear a cute bathing suit this summer! 

Had a nice hot mint tea this morning. Didn't want more coffee, trying to cut down on that morning caffeine so I went with a decaf tea instead. Yumm!!! :)

Lunch time was yummy Paleo tomato soup, a banana and a pear. For snack before workout I ate 1/2 and avocado. Been drinking the water and getting enough in me to make it through the workout!

1 chicken leg

So I went and did my first workout with the personal trainer. Holy cow! Just one set of the training is all I did, man! It's going to be tough. Weights, cardio, rest.. But, with the results I want it will totally be worth it! Can't wait until I start to see results from it!

I'm down 11 pounds. Feels great to get myself back.  It feels great to take that control back over my life. 11 pounds to goal 1. 24 to goal 2 and 36 to goal 3. Back to the gym tomorrow to work with Ben. 

Now onto my day starting with this awesome cup of coffee! :)

Good morning! I head to the gym for my first assessment this morning with a personal trainer! We will see how this goes! Having some coffee. Not to overly hungry this morning yet. But we will see I may wait till after to eat something! Should be fun and interesting to see how this goes! 

Water today is already at 24 oz. Had my first gym training and boy oh boy is this going to be fun. He worked me out! Looks like it's going to be a good training. Lots of work to do. Measurements taken. I know this is going to help!

Lunch was just a handful of macadamia nuts and a handful of raisins. Been a little stressed the last 24 hours so I don't have a big appetite but I know that I need to eat something. Get my healthy fats with the nuts and raisins for all sorts of other benefits. Need to work on something for dinner!

I figured since I've hit the 10 loss mark I would have a glass of red wine with dinner.

10 days in! No cheats treats or junk that's isn't paleo! I have avoiding temptation, invoked my NO voice when offered bad foods. I've done great! I'm 1/3 of the way through my challenge! Tomorrow I do my assessment with the personal trainer I am going to start working with! I'm excited and nervous all at once!

Having my morning coffee and getting kids ready for school. Soon as one is out the door and I am ready, I think I'm going to make a couple eggs for breakfast.

Lunch time and I have had a little pot roast and a salad :)

About 50 oz of water so far today. It's 6 PM and I'm really not feeling to hungry... :/

I slept so good last night. Didn't wake up once and didn't wake up this morning till 5:45! For me that is pretty good. Seems lately I've been up between 5 and 5:30. I didn't do as bad yesterday as I thought. This morning I'm still right were I've been for the last 2 days, so I'm maintaining! Awesome but I need to start this ball rolling again. So, staying away from all the carb foods for a few days until I work out on Saturday and need to add the carb after workout! Starting my morning off with some awesome coffee! 

Found some awesome oranges in the break room after talking myself out of the pineapple cake that was in there. Had 2 oranges for my mid morning snack/ breakfast! They were awesome! Already down with 12 oz of water now that the coffee is gone! Need to get my water on !! :)

Snack was another orange.. I must of been on an orange mood today because they were awesome! Making tacos for dinner! Can't wait!

I have officially completed 1 week! I feel great and I feel like I'm getting back to normal. I have no pound loss for this last day because yesterday I had the sweet potato because I felt the need for some carbs and something sweet. :) all is good though. To much weight to fast is not good! :) tonight we will see how it goes. Wednesday night is the night that we go over to my in laws for dinner with the kids. Now she does make everything from scratch and she makes it all soy free because she has a soy allergy, but I still find sugars and glutens in items. So in order to stick with my challenge, I am going to have to be pretty picky about what I eat tonight. :)

Just having my morning coffee. I've got my lunch packed and debating on just how hungry I am to eat breakfast. Maybe an egg or two might do.

I've only drank about 25 oz of water.. Need to get my water on tonight with dinner! :) my MIL is making a roast but she also has corn board in there too which she makes from scratch and it's AWESOME!!! But I will avoid it tonight! I'm going to be good!!! :)

Well I did ok with dinner. Had some olives, tomatoes and salad along with a nice big piece (probably 12 oz) of nice roast! It was awesome but I feel like I ate way to much! We will see what the scale says in the morning.....

Lots of water today.. I made a point to drink lots before and during dinner. I was trying so hard to stay away from that awesome cornbread and I did!!!! :)

January 7th, 2014

Today is the last day of my week! I'm feeling great, energized, in control! It's been a great week with no mishaps, no treats or cheats, no temptations I couldn't over come, nothing!! I'm down a even 9 pounds. That tells me my body had so much it is holding onto in junk and I totally needed to purge all the crap I was eating! 

This morning I am starting off with my coffee. Not sure what I'm going t have for breakfast. Really not sure just how hungry I am yet. So we will see what the day brings! 

Banana for breakfast
4-5 oz pork roast
Small bowl of carrot soup
Granny Smith apple
Hand full pastasio's

For dinner I went home and roasted some sweet potatoes. They we huge, and I only ate about 1/3 of it. We also had pork chops which I had maybe 3-4 oz of. Along with a tossed salad. Not to overly hungry tonight. My thighs still hurt from least nights kickboxing class! I'm glad I only committed to 1 day a week right now! 

Having a cup of hot orange spice tea. Was just in a tea mood. It's so cold outside I wanted something hot!  Bed looks good tonight! Might be an early night for me! We'll see...

January 6th, 2014

Here we go day 6. This might be a challenge starting today! The kids go back to school and I go back to work today! I'm going to be smart and pack my lunch along with a few little snacks in there, but I have my will power to do this! I got on the scale this morning and I am down some more weight. I have obviously been holding onto some not needed weight, maybe water, all that grain that was in my digestive track and all sorts of things. I know I haven't been starving myself because evening this morning I'm not hungry yet. But since I started on the 1st, I am down 8 pounds. I know it's going to slow down here and it will just be a few ounces. But this is obviously what I have needed to do with myself for awhile! I have a closet full of clothes that are a little snug and I know I am going to have to get down a few more pounds until they fit right again, but I can do it!!!

Tonight I will go t my first cardio kick boxing class. Looking forward to it and excited! Starting this morning off with my black coffee to help we me up before I start getting kids out of bed and ready for school and myself r easy for work!

Ok dinner after coming home from my brutally awesome kickboxing class was 1/2 an avocado and about 4-5 oz of a chuck roast... 20 oz of water at the gym and another 20 right now at dinner :) I think I am done for the day! I'm spent after that class!!!

January 5th, 2014

Wow! Day 5 of this month and I'm feeling awesome! I have lost 5.6 pounds!!! Already started this morning off with a 16 oz water, 2 cups of coffee and breakfast! 3 poached eggs and 4 pieces of beacon! Yummy!!! Trying to decided on what to do for dinner tonight. It's going to either be a soup, roast in the pressure cooker or tacos for the kids and hubby and taco salad for me! The taco salad is sounding good right now, but we shall see what the day brings!

Today the hubby is home and working on some of his fishing stuff and watching his fishing shows, which for me means cleaning and getting ready for my week of school, work and kids activities along with my activities I am starting this week!

It's afternoon now and breakfast still has me full. I have had 2 handfuls of raisins and that's it. We have decided dinner tonight is going to be tacos and taco salad. Almost done with my 3rd 16 oz glass of water!! :)

5 glasses (16 oz each) of water and just a traditional taco salad. Lettuce, tomatoes, onions, meat, some salsa and a little balsamic dressing :) yum yum!

And just so yu all know... I finished the day drinking 6 of my cups of water! If my math is right .. That is 96 oz of water! Yay me!! :)

Carrot soup

Another awesome soup! And as normal it was more or less an eyeball it type of thing!!

1 lb chopped carrots
1 large parsnip chopped
1 chopped yellow onion
1 T ground ginger
1/4 c honey
2 cups chicken or vegetable stock
Salt

Chop up all veggies and toss into the crockpot, fill with seasoning and chicken stock. Set on low heat and leave it.after abut 6-8 hours purée the veggies and it's ready to eat!

This is super yummy. Sprinkle a little salt on top and drizzled a little honey. And I'm so enjoying this soup!

January 4th 2014

Here we go onto day 4. No cheats, no treats, nothing but pure paleo meals and snacks! Not doing to bad right now, I have wanted to eat thse chocolate covered raisins that are in the cupboard, but I haven't! I've been using my will power and staying true to myself. And with that being said. As of this morning I'm down 5 pounds already! Awesome!! Which means to hit my 3 goals, that's only 17 pounds, 30 pounds and 42 pounds! I'm getting there! And I say only because when I started this big huge journey back in June of 2011, I had 124 pounds that I wanted to lose! So, I've done good! 

I have decided to jump on board and get myself a personal trainer. Now that I'm working full time, I have a little extra that I can do that. $30 a session and right now just 1 session a week is what I am going to do. Along with 1 session a week of cardio kickboxing. That will give me 2 really intense workouts a week. We will see what kind of results I show with that. As long as the inches are coming off, I will be ecstatic! :) 

Just woke up a little bit ago, having my morning coffee and trying to plan out my meals for the day. Since  it's just me today and hubby and I for dinner, it's always a little tough to figure out a small meal. I'm so used to cooking huge for 6 people plus left overs. I know tomorrow I'm going to make some soups to last us for the week for lunch time at work. And I have more chilis to use for some chili rellenos (which I make completely paleo!) so here's to another day of eating well and burning the fat away!! 

Had a banana and coffee for breakfast. And now have my new carrot soup recipe in the crockpot. Can't wait to try it now! Also have a few other soups that I want to do as well. Need to go to the store and pick up a few ingredients. One of them is going to have a nice curry paste in it!! :)

Handful of raisins
1 orange
1 green apple

January 3rd, 2014

I'm feeling awesome! Already starting to get my energy levels back!! I'm already down 4 pounds and rid of the 'crap' I've been eating the last couple of months!! Not to overly hungry this morning so breakfast was:

1 large green tip banana
2 cups of coffee

Going to go and get a mani/pedi with my niece this morning then off to the gym for some good cardio and fat burning workout!!

Went and did my mani and pedi and then hit the gym. Over a mile on the treadmill at 3.7 mph. Then did the elliptical for a little bit, then some weight training on my arms. I'm going to start a cardio kick boxing class Monday night. Super excited to start this! Then I have my fitness assessment next weekend. I so need to get back into the swing of things, but this time, I need a little bit of a push to do it! This PT that I'm going to be working with is just that!

Lunch today was a bowl of my chicken soup and a handful of raisins. Also drinking some more water! :) I'm doing good and feeling good and keeping it up. :) I'm going to hit my goal this year for sure! I'm going to get into those size 8's I want to fit into to!!! :)

Snack time hit me and I was so happy to find that my avocados had ripened up!! So 1/2 avocado is what I had along with some more water! I'm almost done with my 4th - 16 oz glass of water! And dinner is the apple/sausage dressing that I make to go into acorn squash. Although I didn't feel like the squash, so I'm just having the stuffing. :)

Actually drank 72 oz of water today!! :)

Chicken noodle-less soup

Since it was such a huge hit here is the recipe for the chicken 'noodle less' soup!!!
Now mind you I make a crockpot full because I feed 6, plus I make extra for the next day to take to work for the hubby and myself for lunches.

10 chopped carrots (I had rainbow carrots on hand)
5 rib of celery sliced
1 chopped onion
6 green onions chopped (just whites and light greens)
1/2 c fresh Italian parsley chopped
3 large chicken breasts (I used bone in)
4 cups chicken stock
Seasoned with salt, pepper, garlic powder, rosemary & thyme

I chopped all the veggies and tossed them in the crockpot. Laid the chicken on top of it all. Then filled the crockpot about 3/4 full of stock (it was approx 4 cups). Once all that was in there I added my seasonings. I'm sorry I don't measure all the time I just eye ball it. About 3-4 good pinches of salt, sprinkled just to cover of pepper, same thing with garlic powder (not garlic salt). Then for the rosemary and thyme, I just cup my hand and pour it into there and sprinkle from there what I have in the palm of my hand.

Once the chicken is cooked and tender (about 6 hours), I took it out of the crockpot and let it sit for a few minutes till I could handle it and pulled it all of the bones, chopped it up and put it back into the crockpot. Let it cook for about another 1-2 hours. 

For the rest of the family that still wanted the noodles I cooked some noodles up on the stove and just spooned that into their bowls, but for mine it was just the chicken and veggies. And oh my was it good!!! Can't wait to have some today for lunch once I am back from my work out!!

January 2nd 2014

Ok, got on the scale this morning and after taking control of just 1 day I'm already down 3 pounds! Goes to show me that I was feeding myself junk! I have 44 pounds to make it to my ultimate goal! Just 19 to make it to the first goal, 32 to the 2nd goal... Then 44... We'll see if I want to do more then that once I get there! :) Here's to today and how it goes! Planning on a homemade chicken soup for dinner in the crock pot. Noodles on the side for the kids and hubby who love the noodles with their su. But not for me! :)

1 cup of coffee ( in my 20 oz cup) ;)
So far I'm on my 2nd 16 oz cup of water.. Feel kind of slacking on the water but I will get it all in by dinner time!
I've had 2 bananas
A handful of raisins
Pear and walnut salad for lunch with some of my balsamic dressing
And can't forget the strawberries I left out for the kids that I've been grazing on as well!

Chicken soup is beginning to smell amazing, can't wait to dig into that one! :) finished off my glass of water and starting on a new one as I type this up! I'm updating on these blogs throughout the day so it may seem to you as morning noon and night or even the next day. So if you are wondering about that, that would be why!

And that was so good! I had 2 bowl and some left over for lunch today!!! :) awesome recipe to add to the books!!

Jan 1st, 2014

Starting the day off right. Which I always start my day off this way. Coffee. Nothing fancy just a cup or two of coffee. Black, nothing in it. But I'm thinking I'm going to try this bullet proof thing that everyone in the paleo community tries. Coffee with some grass fed butter in it. I also know people that have put coconut oil in their coffee as well. Need to start trying this! 

Stepped on the scale this morning and I was totally right abut me spinning out of control with treats and sweets and all! I've worked so hard to lose all this weight over the last 2 years I'm not going to let it sneak back on. I have a lot of work to do and get back where I want to be!! :) 

Took my vitAmins this morning. Multi vitamins, vitamin C and omega 3. Someone I've always done. I've drank 16 oz of water so far and going to drink another 16 here in a few while I eat 1/2 a sweet potato. My tummy is a little upset, think it might be from New Year's Eve and the party we went to. Oy! Totally need to get this body back into the swing of healthy eating! :) 

Have my brand new pressure cooker out and we se going to toss in a few goose breasts for dinner tonight along with some citrus I have in the house. Grapefruit and oranges and a little honey to sweeten it up! It didn't turn out so good. The sauce was awesome but the goose was so overly dry and just didn't taste right. So the hubby pulled out the rest of the roast from a couple nights ago and he and the kids had that!

Other things I had today:
A banana
3 slices of turkey
Handful of raisins
2 cups peppermint tea
Pear and walnut salad
And 3 more 16 oz waters.

I so badly wanted to break open the chocolate squares that we got for Christmas but didn't. And I also wanted a handful of those chocolate covered raisins instead of regular raisins, but I was good there too! Onto tomorrow!
